Peanut Butter Surprise Cookies


(A healthy Version)


Ingredients for 36 cookies

1/2 cup organic creamy peanut butter (can substitute almond butter)
4 tablespoons unsalted butter, room temperature
1 cup packed light-brown sugar (can substitute date
2 large organic eggs
1 teaspoon organic, pure vanilla extract
1 1/2 cups organic, all-purpose flour (can substitute spelt or amaranth flour)
1 teaspoon aluminum-free baking powder
1/4 teaspoon sea salt
1/3 cup organic, granulated sugar, for rolling dough

36 chunks of chocolate or CaCao , chilled

Directions

1. Preheat oven to 350 degrees. Using an electric mixer, cream peanut butter and butter in a mixing bowl until smooth. Add brown sugar; beat until combined, scraping down bowl as needed. Add eggs and vanilla, and beat until incorporated.
2. In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in two batches.
3. Scoop off dough by the tablespoon; roll into balls. Place granulated sugar on a plate; roll balls in sugar, coating completely. Place 2 inches apart on a nonstick insulated baking sheet.
4. Bake until cookies begin to puff up slightly, about 7 minutes. Remove from oven. Press one chunk of chocolate in the center of each cookie. Return to oven; continue baking until cookies are golden brown and chocolate has begun to melt, about 6 minutes more. Let cool at least 10 minutes on baking sheet before transferring cookies to rack to cool completely.


Raw Lasagna


1st Level

Slice a green zucchini the lengthwise and place the thin slices on the bottom of a rectangle glass pan

2nd Level

Spread raw cashew cheese over entire zucchini “noodles”

  • Raw Cashew Cheese:
  • * Soak about ½ cup of raw cashews in a glass jar for at least 4 hours
    * Then drain and throw in to food processor
    * Add 1-2 good squeezes of a lemon
    * Add ½ teaspoon of sea salt
    * Blend until mixture is whipped up
    * *be sure to use a rubber spatula to scrape the sides of the processor bowl from time to time
    * *add 1 teaspoon of water (or more) if the mixture seems dry (this will make it fluffier)

3rd Level

Sprinkle coarsely chopped spinach over entire area of pan (over cheese)


4th Level

Gently spread tomato sauce mixture over entire area of pan (over spinach)

  • Raw Tomato sauce:
  • * 1 small jar of sun dried tomatoes in olive oil. (if you use bagged sun dried tomatoes, add 1 Tablespoon of olive oil)
    * 1 Roma tomato (or ½ of a regular-sized tomato)
    * 1-2 cloves of garlic (depending on your taste buds)
    * 2-4 leaves of fresh basil (depending on your taste buds)
    * Sea salt to taste
    * *be sure to use a rubber spatula to scrape the sides of the processor bowl from time to time
    * Blend until mixture is whipped up
    * Sprinkle oregano flakes on top of entire mixture to taste

*This tomato sauce and Raw cheese can be used on raw pizza or raw spaghetti, too.


Raw Nut Pate (savory)


Soak ½ to 1 cup of either raw walnuts or almonds in a glass container for at least 4 hours

Add the drained nuts to a food processor

Add 1 (or more to taste and consistency) tomato and onion to food processor

Blend mixture until fluffy

Add a few teaspoons of water if mixture appears “dry”

Add sea salt to taste

Always scrape the sides of the processor bowl to ensure complete mixing

Serve with raw or grain crackers or on a lettuce leaf wrapped w/ shredded carrots, peppers, etc.


Raw Nut Spread (sweet)


Soak ½ to 1 cup of raw cashews in a glass container for at least 4 hours

Add the drained nuts to a food processor

Squirt 1-2 teaspoons (or more to taste) of raw agave nectar to the processor bowl

Add ½-1 Tablespoon of veggie oil to processor bowl

Sprinkle 1-2 shakes of cinnamon to processor bowls

Blend mixture until fluffy

Always scrape the sides of the processor bowl to ensure complete mixing

Serve with apple or sweet flax crackers, or whatever you desire!
